I know, I know you must be tired of all the garden talk, but we're really so excited! It has been doing AWESOME. The best part is that it's really encouraging us to try new recipes and be a little more adventurous in the kitchen. So far we've harvested some basil, 8-ball zucchini, yellow squash, regular zucchinis, and eggplant. When Erin visited this week she shared with us her favorite zucchini recipe (which we recreated again tonight for a garden picnic) and Brian made his mom's zucchini cookies. Both are so so good! So, what are your favorite recipes? Anyone want to share something we should try? There's plenty more! Oh! And thanks for our gardening basket, Mom, it's perfect!

What is that Zucchini/Cheesy/Eggy looking creation? It looks really tasty!
Recipe???
I know Erin has a “real” recipe, but we just kind of made it up along the way…
Sauté your zucchini with onion (optional) in olive oil, salt, pepper, oregano, parsley, and basil. Once nice and soft, mix with at least three eggs (more if you want it eggy-er) and shredded mozzarella cheese (once again depends on how cheesy you want it).
On the side, line the bottom of your baking pan with pre-made crescent rolls. Erin then smears mustard on top of the rolls (we did not). Then pour the zucchini/egg mixture on top. Bake at 375 until browned. Delish!
Yeah, I'll be trying that. Looks super yummy! Thanks!
